Since the original thread was getting so long, I thought I would start a new one! I guess this the Heinz 57 thread, whatever you have baked, want to bake or just baking tips and questions. Byrdie and I have been fussing and experimenting trying to get our baguettes to brown while they are baking in the forms. Next up (as soon as I get some starter rehydrated), I am going to try baking them on convection in my oven. Byrdie is going to par bake hers in the forms, then slide them off to sheet pan to finish. As we learned, freezing the unbaked baguettes did not work. Does anyone else have any suggestions or tips?
