I found this recipe on the 'net.
16 ounces ground pork
1 teaspoon salt
1/2 teaspoon dried parsley
1/4 teaspoon rubbed dried sage
1/4 teaspoon ground black pepper
1/4 teaspoon dried thyme
1/4 teaspoon crushed red pepper
1/4 teaspoon ground coriander
1/4 teaspoon MSG (such as Accent Flavor Enhancer)
Ground up some semi lean pork butt.
Mixed in the spices and developed a good bind;
Rolled it up in some saran wrap to form little chubs and placed them in the freezer to firm up;
Once they were firm enough I sliced them into 3/8" slices;
I individually wrapped them in wax paper and vac sealed them 3 to four per bag. that way I can have one or two without thawing a whole bunch of it out.
I also like to let them set in the frig overnight to let the spices meld together before I freeze them up.
