I made my second batch of hotdogs from scratch and decided to do footlongs using cellulose casings so I could have skinless hotdogs. I used beef short ribs for the meat. This is the first time I have used this type of casing. I actually caught the smoker on fire because a couple slipped out of the casings and they landed on the firebox. I lost a few, but still have quite a few left. I went with a pico de gallo topping with homemade chili, homemade pickles, mustard and fried onion rings. I also made the buns. They were really good. That watermelon and grilled pineapple hit the spot on a hot day.
