I know I've posted this recipe before but it's lost somewhere in one of the myriad of generic bread/baking threads. It's such a fabulous bread, easy to make (sincerely, this is easy!) and the result is the perfect bread for a sandwich or if you really want a treat, toast it! Great breakfast accompanyment!
286 grams tepid milk
27 grams olive oil (mild)
15 grams honey
1 T yeast
Heat milk until warm then add oil, honey and yeast. Allow to proof (approx 10 minutes)
390 grams bread flour
100 grams pin oats
6 grams salt
Mix dry then add proofed yeast mixture and mix well by hand. Cover bowl and rest dough for 30 minutes.
Knead on medium speed for five minutes or by hand for 10 minutes. Transfer to lightly greased bowl. Cover lightly with plastic wrap and a towel. Rise until doubled (2-3 hours)
Transfer to well greased loaf pan with parchment liner placed at bottom. Sprinkle with flour and cover lightly with a towel. Allow to rise about 1 inch above rim.
Bake at 350° about 34 minutes Internal temperature of 190° Cool before cutting.
