Not that I really think this deserves a whole new topic, but I was reaching for corn starch this morning, and right on the shelf under it was a little box of Hodgson Mill "Vital Wheat Gluten with Vit C". The instructions say that it's asked for in many bread machine recipes (not in my instruction manuals), but for lack of a specific amount called for useing 4 tsp per loaf. It says it produces "higher, lovelier shaped loaves, softer texture crumb and will extend the shelf life of your home baked breads".
Since I'm not on the gluten=evil bandwagon, and it was less than $2, I bought it. What the heck, someday I'll find my bread pans and all. I was just wondering if anyone else had ever seen this or better yet used it?
