I've spent a lot of time reading about broth and stock, and I've decided that I agree with the claims of health benefits from drinking and cooking with them. Collagen, minerals, vitamins, etc. Now I can't say I've seen anything that says beef based stock is superior to chicken based same, but I know how to make chicken stock (now) and have never really tried beef.
I'm collecting bones, and I'm freezing them until I have enough to start the whole process of roasting then simmering, but does anyone have an idea of how to collect a lot of bones at once for cheap? I've been going for things like soup bones, things with little meat, should I look for meatier bones? In stock, does amount of meat matter?
I can find this info on the 'net, I just trust the people here and their opinions more.
